Probiotics are live bacteria or yeasts found in fermented foods that, when eaten, live in our guts and improve health. Miso is a fermented food that is loaded with probiotics. I’musing red miso for the red miso soup here, but you can also get white miso.

Red Miso Soup Recipe Ingredients
- 12 tbsp darkmiso paste
- 1 cup water
- 1L water
- 500g firmtofu, cut into bite-sized cubes
- 1 head broccoli, broken into small florets
- 2 cup finely chopped white cabbage
- 4 stems kale, shredded
- 2 carrots, cut into matchsticks
- 2 sticks celery, sliced thinly on diagonal
- 2 sheets nori, torn into small pieces
- 1 spring onion, sliced thinly on diagonal
- 2 tbsp sesame seeds
Red Miso Soup Recipe Preparation
- Mix miso in 1 cup water to formslurry.
- In pot, bring 1L water to boil.
- Add tofu, broccoli, kale, cabbage, carrot and celery, and bring to boil. Once boiling, add nori. Turn off heat, add miso slurry and stir.
- Serve in 4 bowls, top with sliced spring onion and sesame seeds.
- Enjoy immediately.
