Power Lentil Apple Salad Ingredients
- 1 (15-ounce) can green lentils, drained and rinsed
- 1 Fuji apple, cored and diced
- ¼ cup diced red onion
- ¼ cup dried cranberries
- ¼ cup toasted sunflower seeds
- ¼ cup crumbled feta cheese
Apple Cider Vinaigrette
- ¼ cup extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 2 teaspoons granulated sugar
- 1 teaspoon salt
- ¼ teaspoon freshly ground black pepper
Power Lentil Apple Salad Preparation
- In a small bowl, whisk all the ingredients together until the sugar dissolves. Taste for seasoning. Store any leftover dressing in an airtight container in the refrigerator for up to 1 week.
- In a large bowl, toss all the ingredients with 2 tablespoons of Apple Cider Vinaigrette. Taste and add more dressing, if desired.
