Both globe and Jerusalem artichokes are considered prebiotic foods like roasted artichoke recipe. Prebiotics are indigestible plant fibres that feed the good bacteria in the gut.
Serves: 4
Juice 1 lemon
Olive oil
Small handful fresh thyme
Pinch sea salt
2 garlic cloves
Tzatziki
⅔ cup organic Greek yoghurt
1 tbsp lemon juice & 1 tsp zest
1 small cucumber, deseeded & grated
Small handful mint leaves, finely chopped
Wash artichokes, trim stems and remove any tough outer leaves from bottom of artichoke.
Cut top off and trim ends of leaves to remove any sharp ends.
Cut artichoke in half down middle and scoop out furry choke from centre.
Drizzle top and bottom of artichoke in lemon juice and olive oil, thyme and sea salt.
Place garlic clove in centre of each artichoke and bake for around 45 mins until knife goes through or leaves pull off easily.
To make tzatziki, combine all ingredients and serve in small dish.
