Apricots are packed with vitamin A, making them an excellent addition to your diet to help support eye health and vision along with reducing the risk of age-related macular degeneration. These important nutrients also help enhance immune function and have an anti-inflammatory action.

Apricot Chicken Tagine Ingredients
- 1 tsp ground ginger
- ¼ tsp sea salt
- Pinch pepper
- 1 tsp turmeric
- ½ tsp cinnamon
- 500g chicken thigh fillets, chopped into large pieces
- Olive oil
- 1 red onion, thinly sliced
- 3 cloves garlic, minced
- Handful fresh herbs (coriander, mint, parsley)
- 1 cup chicken broth or bone broth
- 1 tin chopped tomatoes
- 2 tbsp rawhoney
- ¾ cup dried apricots, roughly chopped
- Cooked brown rice, quinoa, couscous,
- flat bread or yoghurt, to serve
Apricot Chicken Tagine Preparation
- Place ginger, sea salt, pepper, turmeric and cinnamon in medium bowl and add chicken, tossing until well covered.
- In large pot or tagine, heat olive oil over medium heat and add onion, garlic and half of fresh herbs and cook for 3–4mins. Add chicken pieces and cook for 5 mins until browned.
- Add chicken broth, tomato, honey and apricots. Bring to boil and reduce to a simmer for 1 hour, covered, until chicken is fully cooked through and liquid has thickened.
- Top with fresh herbs and serve.
