Warm Bacon and Arugula Salad Ingredients
- 4 oz smoked bacon, cut into pieces
- 8 oz (1¼ cups) cherry tomatoes, halved
- 7 oz arugula, torn
- ⅓ cup Parmesan, grated
- 2 tablespoons olive oil
- ½ tablespoon balsamic vinegar
- Salt to taste
Warm Bacon and Arugula Salad Preparation
- Add bacon to a frying pan and cook until golden.
- Mix ½ tablespoon balsamic vinegar with 2 tablespoons olive oil to make the salad dressing.
- Place arugula on serving plates and dress with vinegar & oil mix, add bacon, Parmesan, and tomatoes.
