Shredded chicken salad Ingredients
- 2 chicken breasts, boneless, skinless
- 1 head iceberg lettuce, cut into strips
- 2 bell peppers, cut into strips
- 1 fresh cucumber, quartered, sliced
- 3 scallions, sliced
- 2 tablespoons chopped peanuts
- 1 tablespoon peanut vinaigrette
- Salt to taste
- 1 cup water
Shredded chicken salad Preparation
- In a skillet simmer one cup of salted water.
- Add the chicken breasts, cover and cook on low for 5 minutes. Remove the cover. Then remove the chicken from the skillet and shred with a fork.
- In a salad bowl mix the vegetables with the cooled chicken, season with salt and sprinkle with peanut vinaigrette and chopped peanuts.
