Roasted Portobello Salad Ingredients
- 1½ pounds Portobello mushrooms, stems trimmed
- 3 heads Belgian endive, sliced
- 1 small red onion, sliced
- 4 oz blue cheese
- 8 oz mixed salad greens
Dressing:
- 3 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- ⅔ cup olive oil
- Salt and pepper to taste
Roasted Portobello Salad Preparation
- Preheat the oven to 450°F.
- Prepare the dressing by whisking together vinegar, mustard, salt and pepper. Slowly add olive oil while whisking.
- Cut the mushrooms and arrange them on a baking sheet, stem-side up. Coat the mushrooms with some dressing and bake for 15 minutes.
- In a salad bowl toss the salad greens with onion, endive and cheese. Sprinkle with the dressing.
- Add mushrooms to the salad bowl.
