Roasted Portobello Salad Ingredients

  • 1½ pounds Portobello mushrooms, stems trimmed 
  • 3 heads Belgian endive, sliced 
  • 1 small red onion, sliced 
  • 4 oz blue cheese 
  • 8 oz mixed salad greens

Dressing:

  • 3 tablespoons red wine vinegar 
  • 1 tablespoon Dijon mustard 
  • ⅔ cup olive oil 
  • Salt and pepper to taste

Roasted Portobello Salad Preparation

  1. Preheat the oven to 450°F. 
  2. Prepare the dressing by whisking together vinegar, mustard, salt and pepper. Slowly add olive oil while whisking. 
  3. Cut the mushrooms and arrange them on a baking sheet, stem-side up. Coat the mushrooms with some dressing and bake for 15 minutes. 
  4. In a salad bowl toss the salad greens with onion, endive and cheese. Sprinkle with the dressing. 
  5. Add mushrooms to the salad bowl.
