Loaded Salad with Avocado Ranch Dressing Ingredients

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1½ cups croutons
  • 1 (8-ounce) bag chopped romaine lettuce
  • 1 English cucumber, chopped
  • 1 cup shredded Cheddar cheese
  • 2 Roma tomatoes, chopped
  • 2 hard-boiled eggs, chopped
  • ¼ cup diced red onion

Avocado Ranch Dressing

  • ½ avocado, diced
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup mayonnaise
  • 2 tablespoons buttermilk
  • 1 teaspoon kosher salt
  • ½ teaspoon dried parsley
  • ½ teaspoon paprika
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder

Loaded Salad with Avocado Ranch Dressing Preparation

  1. In a blender, combine all the ingredients and process until smooth. Taste for seasoning. Store any leftover dressing in an airtight container in the refrigerator for up to 1 week.
  2. In a large bowl, toss all the ingredients with 3 tablespoons of Avocado Ranch Dressing. Taste and add more dressing, if desired.
