Loaded Salad with Avocado Ranch Dressing Ingredients
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1½ cups croutons
- 1 (8-ounce) bag chopped romaine lettuce
- 1 English cucumber, chopped
- 1 cup shredded Cheddar cheese
- 2 Roma tomatoes, chopped
- 2 hard-boiled eggs, chopped
- ¼ cup diced red onion
Avocado Ranch Dressing
- ½ avocado, diced
- ¼ teaspoon freshly ground black pepper
- ¼ cup mayonnaise
- 2 tablespoons buttermilk
- 1 teaspoon kosher salt
- ½ teaspoon dried parsley
- ½ teaspoon paprika
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
Loaded Salad with Avocado Ranch Dressing Preparation
- In a blender, combine all the ingredients and process until smooth. Taste for seasoning. Store any leftover dressing in an airtight container in the refrigerator for up to 1 week.
- In a large bowl, toss all the ingredients with 3 tablespoons of Avocado Ranch Dressing. Taste and add more dressing, if desired.
