Hummus Summer Veggie Salad Platter Ingredients
- 1 (10-ounce) container regular hummus
- 1 (8-ounce) bag baby spinach
- ¼ cup sliced radishes
- ½ cup chopped sugar snap peas
- 1 cup halved cherry tomatoes
- ¼ cup pine nuts
- ¼ cup roughly chopped parsley
- ¼ cup feta cheese
- 4 pita rounds
Red Pepper Lemon-Garlic Dressing
- ¼ cup extra-virgin olive oil
- 2 garlic cloves, minced
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
- ½ teaspoon red pepper flakes
Hummus Summer Veggie Salad Platter Preparation
- In a medium bowl, whisk all the ingredients. Taste for seasoning.
- In a serving bowl or on a platter, place the hummus as the base of the salad.
- On top of the hummus, lay the baby spinach, cherry tomatoes, sugar snap peas, radishes, pine nuts, parsley, and feta cheese.
- Drizzle with Red Pepper Lemon-Garlic Dressing. Heat up the pita rounds and serve with the salad.
