Ground turkey salad Ingredients

  • 1 pound lean ground turkey 
  • ½ inch ginger, minced 
  • 2 garlic cloves, minced 
  • 1 onion, chopped 
  • 1 tablespoon olive oil 
  • 1 bag lettuce leaves (for serving) 
  • ¼ cup fresh cilantro, chopped 
  • 2 teaspoons coriander powder 
  • 1 teaspoon red chili powder 
  • 1 teaspoon turmeric powder 
  • Salt to taste 
  • 4 cups water 

Dressing:

  • 2 tablespoons fat free yogurt 
  • 1 tablespoon sour cream, non-fat 
  • 1 tablespoon low fat mayonnaise 
  • 1 lemon, juiced 
  • 1 teaspoon red chili flakes 
  • Salt and pepper to taste 

Ground turkey salad Preparation

  1. In a skillet sauté the garlic and ginger in olive oil for 1 minute. Add onion and season with salt. Cook for 10 minutes over medium heat. 
  2. Add the ground turkey and sauté for 3 more minutes. Add the spices (turmeric, red chili powder and coriander powder). 
  3. Add 4 cups water and cook for 30 minutes, covered. 
  4. Prepare the dressing by combining yogurt, sour cream, mayo, lemon juice, chili flakes, salt and pepper.
