Ground turkey salad Ingredients
- 1 pound lean ground turkey
- ½ inch ginger, minced
- 2 garlic cloves, minced
- 1 onion, chopped
- 1 tablespoon olive oil
- 1 bag lettuce leaves (for serving)
- ¼ cup fresh cilantro, chopped
- 2 teaspoons coriander powder
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- Salt to taste
- 4 cups water
Dressing:
- 2 tablespoons fat free yogurt
- 1 tablespoon sour cream, non-fat
- 1 tablespoon low fat mayonnaise
- 1 lemon, juiced
- 1 teaspoon red chili flakes
- Salt and pepper to taste
Ground turkey salad Preparation
- In a skillet sauté the garlic and ginger in olive oil for 1 minute. Add onion and season with salt. Cook for 10 minutes over medium heat.
- Add the ground turkey and sauté for 3 more minutes. Add the spices (turmeric, red chili powder and coriander powder).
- Add 4 cups water and cook for 30 minutes, covered.
- Prepare the dressing by combining yogurt, sour cream, mayo, lemon juice, chili flakes, salt and pepper.
