Green Brown Rice Salad Ingredients
- 1 (8-ounce) box instant brown rice
- 1 (8-ounce) bag fresh spinach, roughly chopped
- ½ cup diced zucchini
- ¼ cup chopped scallions, green part only
- ¼ cup chopped fresh parsley
- ¼ cup crumbled feta
Italian Dressing
- ¼ cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon dried Italian seasoning
- 1 garlic clove, minced
- 1 teaspoon granulated sugar
- 1 teaspoon Dijon mustard
- ½ teaspoon red pepper flakes
Green Brown Rice Salad Preparation
- In a small bowl, whisk all the ingredients together until the sugar has dissolved. Taste for seasoning. Store any leftover dressing in an airtight container in the refrigerator for up to 1 week.
