Fresh Greek Cucumber Herb Salad Ingredients
- 1 (8-ounce) bag mixed greens
- 2 English cucumbers, sliced rounds
- 2 Roma tomatoes, cut into wedges
- ½ red onion, sliced
- ½ cup roughly chopped fresh parsley
- ¼ cup julienned fresh basil
- ¼ cup julienned fresh mint
- ¼ cup crumbled feta cheese
Tzatziki Sauce
- ¼ cup grated cucumber
- ¼ cup plain Greek yogurt
- 1 tablespoon extra-virgin olive oil
- 2 teaspoons chopped fresh dill
- 2 teaspoons chopped fresh parsley
- 2 teaspoons freshly squeezed lemon juice
- 1 garlic clove, minced
- ½ teaspoon kosher salt
Fresh Greek Cucumber Herb Salad Preparation
- Place the grated cucumber on paper towels or cheesecloth and squeeze out as much of the liquid as you can.
- Using a spatula, fold the cucumber together with all the remaining ingredients in a small bowl and taste for seasoning.
- Store any leftover dressing in an airtight container in the refrigerator for up to 1 week.
- In a large bowl, gently toss all the ingredients with 3 tablespoons Tzatziki Sauce. Taste and add more dressing, if desired.
