Apple Orchard Spinach Salad Ingredients
- 1 Fuji apple
- 1 Granny Smith apple
- 1 (10-ounce) bag spinach
- ¼ cup thinly sliced red onion
- ¼ cup pecans
- ¼ cup goat cheese
- 2 tablespoons balsamic vinegar
Balsamic Dressing
- ¼ cup extra-virgin olive oil
- ½ teaspoon kosher salt
- Freshly ground black pepper
- 2 teaspoons Dijon mustard
Apple Orchard Spinach Salad Preparation
- In a small bowl, whisk all the ingredients together. Taste for seasoning. Store any leftover dressing in an airtight container in the refrigerator for up to 1 week.
- Cut each apple in half, core, and thinly slice into half-moons.
- In a large bowl, combine the apples, spinach, red onion, and pecans and toss with 2 tablespoons of Balsamic Dressing. Taste and add more dressing, if desired.
- Place the salad on plates and crumble the goat cheese over each salad.
