Warm Honey-Sautéed Carrots and Quinoa Salad Ingredients
- 1 (12-ounce) bag boil-in-bag quinoa
- 1 (10-ounce) bag shredded carrots
- 1 teaspoon kosher salt
- Freshly ground black pepper
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons honey
- ¼ cup sliced almonds
Citrus Honey Vinaigrette
- ¼ cup extra-virgin olive oil
- ¼ teaspoon freshly ground black pepper
- 1 teaspoon salt
- 2 teaspoons freshly squeezed lemon juice
- 2 teaspoons freshly squeezed orange juice
- 2 teaspoons honey
Warm Honey-Sautéed Carrots and Quinoa Salad Preparation
- In a small bowl, whisk all the ingredients together until the salt has dissolved. Taste for seasoning.
- Cook the boil-in-bag quinoa according to package directions, then set aside to cool.
- In a sauté pan over medium-high heat, heat the olive oil and sauté the carrots for about 5 minutes, until tender. Season the carrots with salt and pepper.
- Add the honey and toss to coat the carrots.
- Taste for seasoning and turn off the heat.
- In a large bowl, toss the quinoa, sliced almonds, and sautéed carrots with 2 tablespoons of Citrus Honey Vinaigrette. Taste and add more dressing, if desired.
