Cheesy Sausage Grits Bowl Ingredients
- 1 ½ cups quick-cooking white corn grits
- 3 cups (12 oz.) grated cheddar cheese
- 2 tsp. sweet paprika
- 1 tbsp. EVOO
- 12 oz. andouille sausage, thinly sliced into coins
- 2 cups cherry tomatoes
- 4 scallions, thinly sliced, plus more for serving
- Hot sauce (optional)
Cheesy Sausage Grits Bowl Preparation
- Bring 6 cups water to a boil in a medium saucepan.
- Whisk in grits and a few pinches of salt; reduce heat to low.
- Cook grits, whisking frequently, until softened and water is absorbed, 5 minutes.
- Remove from heat.
- Stir in cheese and paprika. Cover to keep warm.
- In a large skillet, heat EVOO over medium-high.
- Add andouille; cook, turning halfway through, until golden, about 4 minutes.
- Stir in tomatoes and scallion.
- Cook, stirring occasionally, until tomatoes burst, about 4 minutes more, and gently press the tomatoes with the back of a spoon to create a sauce.
- Spoon andouille mixture over cheesy grits.
- Drizzle with hot sauce, if desired.
- Serves 4.
