California Style Breakfast Burritos Ingredients
- 1 tbsp. EVOO
- 1 cup frozen
- shredded hash browns
- 3 large eggs
- 1 burrito-size (12-inch) flour tortilla
- 1/3 cup shredded pepper Jack cheese
- ½ avocado, sliced
- 3 tbsp. canned black beans, rinsed and drained
- 3 tbsp. salsa
California Style Breakfast Burritos Preparation
- Heat a 10-inch nonstick skillet over medium heat. Add EVOO and hash browns. Cook, stirring occasionally, until golden and crisp, 8 to 10 minutes.
- Remove to a plate. Beat eggs and season with salt and pepper, then pour into the same skillet over medium heat.
- Place a flour tortilla over eggs.
- Cook, undisturbed, for 1 minute.
- Flip, tortilla-side down, and sprinkle with cheese. Cook until tortilla is golden and egg is cooked through, 1 minute more.
- Slide onto a plate, still tortillaside down. Top with cooked hash browns, avocado slices, beans, and salsa.
- Fold in sides of tortilla and then fold over top and bottom to close.
- Slice and serve.
- Makes 1 burrito.
