California Style Breakfast Burritos Ingredients

  • 1 tbsp. EVOO 
  • 1 cup frozen
  • shredded hash browns 
  • 3 large eggs 
  • 1 burrito-size (12-inch) flour tortilla 
  • 1/3 cup shredded pepper Jack cheese 
  • ½ avocado, sliced
  • 3 tbsp. canned black beans, rinsed and drained 
  • 3 tbsp. salsa

California Style Breakfast Burritos Preparation

  • Heat a 10-inch nonstick skillet over medium heat. Add EVOO and hash browns. Cook, stirring occasionally, until golden and crisp, 8 to 10 minutes. 
  • Remove to a plate. Beat eggs and season with salt and pepper, then pour into the same skillet over medium heat. 
  • Place a flour tortilla over eggs. 
  • Cook, undisturbed, for 1 minute. 
  • Flip, tortilla-side down, and sprinkle with cheese. Cook until tortilla is golden and egg is cooked through, 1 minute more. 
  • Slide onto a plate, still tortillaside down. Top with cooked hash browns, avocado slices, beans, and salsa. 
  • Fold in sides of tortilla and then fold over top and bottom to close. 
  • Slice and serve.
  • Makes 1 burrito.
