Bacon Blueberry Cornmeal Muffins Ingredients
- 1 box (8.5 oz.) corn muffin mix
- 1 large egg
- 1/3 cup whole milk
- ½ tsp. finely grated lemon zest
- ¾ cup fresh blueberries
- ¼ cup chopped cooked bacon (from 3 slices), plus 2 slices cooked bacon, cut into thirds
- 4 tbsp. salted butter, softened
- 1 tbsp. maple syrup or honey
Bacon Blueberry Cornmeal Muffins Preparation
- Preheat oven to 400°.
- Line 6 cupcake tins with paper liners.
- In a medium bowl, stir together muffin mix, egg, milk, and lemon zest.
- Fold in blueberries and chopped bacon.
- Fill liners with batter (about ¼ cup each).
- Top each with a third of a slice of cooked bacon.
- Bake until puffed and golden and a toothpick inserted in the center comes out clean, 15 to 20 minutes.
- In a small bowl, blend butter with maple syrup or honey.
- Serve spread with warm muffins.
- Makes 6 muffins.
