Bacon Blueberry Cornmeal Muffins Ingredients

  • 1 box (8.5 oz.) corn muffin mix
  • 1 large egg 
  • 1/3 cup whole milk
  • ½ tsp. finely grated lemon zest
  • ¾ cup fresh blueberries
  • ¼ cup chopped cooked bacon (from 3 slices), plus 2 slices cooked bacon, cut into thirds
  • 4 tbsp. salted butter, softened
  • 1 tbsp. maple syrup or honey

Bacon Blueberry Cornmeal Muffins Preparation

  • Preheat oven to 400°. 
  • Line 6 cupcake tins with paper liners. 
  • In a medium bowl, stir together muffin mix, egg, milk, and lemon zest.
  • Fold in blueberries and chopped bacon. 
  • Fill liners with batter (about ¼ cup each). 
  • Top each with a third of a slice of cooked bacon. 
  • Bake until puffed and golden and a toothpick inserted in the center comes out clean, 15 to 20 minutes. 
  • In a small bowl, blend butter with maple syrup or honey. 
  • Serve spread with warm muffins. 
  • Makes 6 muffins.
