- Preheat oven to 350°F.
- Melt the ghee or butter and mix with the chili powder, lemon zest, and garlic.

- 4 Sun-Dried Tomatoes
- 4 green olives, sliced
- 10–20 fresh basil leaves
- 6 slices of prosciutto

- Preheat oven to 350°F.
- Slice the raw chicken breast in half and place two sun-dried tomatoes, two sliced olives, and three to four torn basil leaves in between each breast.
- Wrap each breast with three slices of prosciutto to seal the filling in place.

- Ghee or butter for the pan
- 1 tablespoon ground turmeric
- 1 teaspoon black pepper
- 2 chicken breasts or 4 thighs/legs
- 2 garlic cloves, finely chopped
- 1 large onion, chopped
- Pinch of salt
- 1 yellow or red pepper, chopped
- 8–10 cherry tomatoes
- 1 zucchini, sliced
- Juice of half a lemon
PREPARATION TIME: 10 minutes
COOKING TIME: 20–30 minutes
SERVES: 2
- Preheat oven to 350°F.
- Melt 1 tablespoon of ghee or other oil. Place in a bowl and mix with the turmeric and black pepper.
- Gently coat the pieces with the oil and spices. Place it in a baking dish and cook for 20–30 minutes.
- Melt the rest of the oil in a frying pan over low heat. Add the garlic and onion and stir-fry.
- Place chopped pepper, cherry tomatoes, sliced zucchini in the pan and toss in the oil, garlic, and salt.
- Stir-fry until the peppers and zucchini begin to soften.
- Serve the cooked chicken and vegetables together, squeezing the lemon juice over both.

This dish is so quick that you’ll have no excuse for ordering out. Simple ingredients combine to make a fantastic tasting dish. Make extra and have the leftovers for lunch.
- 3 scallions
- 1 tablespoon coconut oil
- 1 heaping tablespoon Chinese five spice
- 1 garlic clove, finely chopped
- ½-inch piece of fresh ginger, peeled and finely chopped
- 2 large chicken breasts (keep skins on)
- For the Rice
- 1 cup Cauliflower Rice
- Salt and pepper to taste
PREPARATION TIME: 5 minutes
COOKING TIME: 25 minutes
SERVES: 2
- Preheat oven to 350 °F.
- Chop the scallions. (These are for adding to the Cauliflower Rice, so set them aside.)
- Melt the coconut oil and place in a medium bowl. Add the Chinese five spice, garlic, and ginger, and stir into a paste.
- Coat chicken in the marinade, and place the pieces into a baking dish.
- Bake it for around 25–30 minutes, until cooked through. (Check by inserting a sharp knife; the juices should run clear.)
- Five minutes before the its is ready, start to make the Cauliflower Rice and add the chopped scallions to the recipe. Cook the rice over low heat, stirring occasionally to prevent the cauliflower from overcooking.
- Season the cauliflower with salt and pepper, and serve when chicken is ready.

You might think preparing a curry will take hours, but this tasty, simple blend of spices with chopped tomatoes is incredibly quick to make and any meat or fish can be substituted.
- Ghee, butter, or coconut oil for the pan
- 2 chicken breasts or 4 thighs/legs, chopped
- 2 teaspoons medium curry powder
- 2 teaspoons ground coriander
- ½ teaspoon ground cumin
- ½ teaspoon turmeric
- ½ teaspoon black pepper (optional)
- 1 tablespoon peeled and grated ginger
- 2 garlic cloves, finely chopped
- 1 large onion, chopped
- 1 14.5-ounce can of diced tomatoes
Serve with
Cauliflower Rice
- Add the oil to a saucepan and sauté the chicken for 5 minutes.
- Add all the spices, ginger, garlic, onion, and tomatoes. (Add extra water if needed.)
- Bring to a boil and simmer for around 20–30 minutes or until the chicken is cooked and tender
