This is a classic Italian dish, but we’ve swapped the pasta for something more nutrient-dense: zucchini spaghetti. It’s fantastic for a big family dinner. You will need a julienne peeler for this.
For the Meatballs
- 1 egg
- 1 pound ground beef
- 2 tablespoons finely chopped fresh rosemary
- 1 heaping tablespoon oregano
- Salt, pepper to taste
- Ghee or butter for the pan
For the Sauce
- 1 large white onion, chopped
- 6 black poplar mushrooms, chopped
- 4 garlic cloves, finely chopped
- 10–20 fresh basil leaves, finely chopped
- 2 14-ounce cans of chopped tomatoes
- 1 teaspoon chili powder (optional)
For the Spaghetti
- 3 zucchinis, julienned
PREPARATION TIME: 10 minutes
COOKING TIME: 20–25 minutes
SERVES: 4
- Start by making the meatballs. In a large bowl, beat an egg and add the ground beef, oregano, chopped rosemary, salt....pepper. Use your hands to mix together thoroughly.
- Melt some ghee in a large pan. Shape the mixture into meatballs around 2 inches in diameter and place in the pan over medium heat, moving it around every now and then to ensure that the meat browns on all sides.
- While these are cooking, start to make the sauce. In another large pan, heat the butter/ ghee and add the onion, mushrooms, garlic, and basil.
- Stir the ingredients and cook through until the onion and mushroom have softened slightly.
- Add the tomatoes and chili powder, and stir. Bring the sauce to a simmer.
- Add the meatballs to the sauce and continue to simmer for 5 minutes while you make the spaghetti
- To prepare the zucchini spaghetti, melt a little butter in a saucepan and add the julienned zucchini. (You can grate the zucchini if you don’t have a julienne slicer.) Keep stirring until the zucchini softens to a texture you prefer.
- Drain the spaghetti. Serve topped with the sauce and meatballs
Best paleo recipes: Lightning Lamb Kebabs
Why are these called Lightning Lamb Kebabs? Simply because they are so quick to prepare and cook. Lamb is one of our favorite meats, and this recipe is inspired by some of the great-tasting lamb dishes we tried during our vacation on the Greek island of Santorini. These lamb kebabs are great straight from the oven, but are so flavorsome they’re awesome served cold the next day, too. Paleo burgers are a great company to these :)
- 3 tablespoons olive oil
- 2 garlic cloves, finely chopped
- 1 tablespoon smoked paprika
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 pound lamb, cut into 1½-inch cubes
- 6–8 fresh sprigs of rosemary or kebab sticks
- 1 red pepper, deseeded and cut into 1-inch squares
- 1 red onion, peeled and quartered
PREPARATION TIME: 8–10 minutes
COOKING TIME: 10 minutes
SERVES: 2
Serve with
a large mixed salad
- Preheat grill to medium heat so it is ready as soon as the kebabs are prepared.
- Mix the olive oil, garlic, smoked paprika, cumin, salt, and pepper together in a bowl until it turns into a paste.
- Add the paste to the pieces of lamb and coat thoroughly.
- Prepare the rosemary sprigs by removing a few of the leaves from the bottom of the sprig. Skewer the lamb, peppers, and onion onto the rosemary sprigs, alternating meat and vegetables. (Spear them at the base of the rosemary sprig, as this is much easier.)
- Place the kebabs on the grill for 5–10 minutes, turning regularly until cooked to your liking
